5 Easy Dinner Recipes to Cook This Week

I have grown to love cooking but I’m not one of those people that like to spend hours in the kitchen. Sundays are my days where I meal prep my lunch for the week and also plan dinner recipes. I’m not a fan of meal prepping for dinner as well simply because that would require half my day in the kitchen….no bueno. Instead, I like to plan my meals and make sure my kitchen is stocked with all the ingredients needed for those dinner meals throughout the week. I like to make dinner simple but flavorful. Here a few recipes that accomplish both

Grilled Steak with Greek Corn Salad

Gilled Steak with Greek Corn Salad
This corn salad tasted so much better than I expected it to be. the cheese has a bit of depth to the salad without be too overwhelming. The recipe calls for cube steak but out local Sprouts had a sale on thin ribeye’s.
This recipe is easy in that you don’t have anything to cook, you’re only putting together cooked item and baking them. I like to cook these on Monday or Tuesday so that my husband has leftovers for lunch (he doesn’t meal prep his lunch)

Linguine with Shrimp Scampi

Linguine with Shrimp Scampi

My life isn’t complete if I don’t have pasta at least once a week. It’s up there with my love for coffee and bread…I need those to breath! My husband isn’t too fond of shrimp so I some leftover rotisserie chicken from the enchiladas for his meal. I like to pair pasta with asparagus or a spinach/kale salad to make sure I get my daily servings of veggies needed.

Inside-Out Chicken Cordon Bleu

Inside Out Chicken Cordon Bleu

I’ve never had much luck with cordon bleu. I either over-cooked it and the chicken was too dry or under-cooked it and all know what under-cooked chicken looks like. When I found this recipe, I was thrilled! it had SO much flavor with a little crisp from the chicken. I like to pair this with green beans and brown rice.

Primavera Stuffed Chicken

I like this recipe for 3 reasons: it’s easy to make, the taste is outta this world, and I mean really….how gorgeous does this look?
